Chicken Schnitzel with Creamy Mash Potato and Herb Butter

What you will need
4 Canon Foods Chicken Schnitzel
50g butter for frying (or olive oil)
4 portions mash potato heated
50g crème fraiche
1 tsp garlic powder
Herb Butter
100g butter softened
2 tbsp each of finely chopped chives, flat leaf parsley and tarragon
To serve
Simple green salad or seasonal greens
Lemon wedges
Method
To finish the mash potato, add crème fraiche and garlic powder and fold through, season to taste.
Fry the chicken and corn schnitzel in a large fry pan in butter or olive oil until golden and crispy and thoroughly cooked.
To serve spoon mash potato onto the plates, add schnitzel and a side of greens.
Finish with placing a knob of herb butter onto the hot schnitzel and mash and allowing it to melt, serve with lemon wedges.
